The bacteriological quality of unpasteurized milk and traditional dairy products sold via informal circuit in Djelfa City (Algeria)

Abstract

The objective of this study was to assess the bacteriological quality of unpasteurized milk and two traditional dairy products (L’ben and J’ben) commercialized in local markets via informal circuit. A total of 90 samples were collected from twenty-five retail outlets in various parts of Djelfa city and were analyzed. The results show that the hygienic quality is insufficient. The log mean total bacterial count per ml was estimated at 7.16 for raw milk and 80% of this milk contained more than 5 log cfu/ml. The average contamination of raw milk by thermotolerant coliforms was 4.79 cfu/ml against 4.93 cfu/ml for L’ben and 4.97cfu/ml for J’ben. Staphylococcus aureus was detected in 21.11% while sulphite reducing clostridia was detected in raw samples milk with 16.6%. In addition, 18.88% of samples were positive for E. coli. Paradoxically, all samples were free from Salmonella, fecal streptococci and Brucella antibody. The poor quality of milk and traditional dairy products reflects the deplorable conditions of production and transformation and requires more control and rigor on the part of the state, producer and consumer. Keywords: Algeria, consumer, hygienic quality, J’ben, L’ben, pathogens, raw milk.
